The baby shiitake mushrooms are preserved in a delicious master sauce, which is crafted from the highest quality vinegar, tamari and spices.
The resulting flavour is a perfect match to the woody umami aroma of the shiitake mushrooms.
Enjoy them as is, on a cheese platter, in a salad, tossed through pasta or as part of a stir-fry.
The preserved mushrooms are shelf stable and have a long expiry date.
Forrest Foods is owned and run by Paul and Wendy Troughton with the help of their three children Claire, Max and Kaye. The couple also run a successful dairy operation on their farm in Gerangamete in Victoria’s stunning Otway region.
The Troughtons are passionate about sustainable farming and regenerative agriculture and horticulture. They participate in an on-farm composting program and are members of both the Gerangamete Landcare Group and the Otway Agroforestry Network.
Paul and Wendy are proud members of their local community and the township of Forrest, from which their business derives its name. Forrest has evolved from a sawmilling town on the edge of the historic Otway rainforest, to a vibrant tourist hub with myriad bushwalking and cycling trails, restaurants, shops and a local brewery all attracting visitors to this scenic region.
